It might be tough since your issue only happens at night. I'd try and get a tech out and have them investigate. Doesn't sound like you're completely losing service so not likely you'd see that. If you don't have TV service, it's harder to tell but you might see the MGMT or the NTWRK LED turn off. If you have TV service the red video LED will light up on the ONT when the fiber optic signal drops too low. There's a chance that's your issue, but wouldn't count on it. Service will return to normal in the morning as the temperature rises. What sometimes happens, it is somewhat rare, is that the splice enclosures that the fibers are contained in can get water in them, and when the temperatures drop, the water will freeze and start pinching at the fiber attenuating the signal and causing packet loss. It seems rather clear to me that the slowdowns are coming from Verizon.unless I'm missing something.
